Pork is one of the most widely eaten meats, accounting for about 38% of meat production worldwide. Pork is eaten both freshly cooked and preserved. Fresh pork may contain Trichinosis so the USDA recommends cooking ground pork to an internal temperature of 160 degrees, followed by a 3 minute rest, and cooking whole cuts to a minimum internal temperature of 145 degrees, also followed by a 3 minute rest.
